Ingredients:

  • 2-3 racks of pork ribs

  • Uncle Tim’s T-13 rub

  • Wood chips for smoking (hickory, mesquite, apple, etc.)

  • Barbecue sauce

Instructions:

  1. Remove the membrane from the back of each rack of ribs by slipping a knife between the membrane and the bone, then using a paper towel to grip and pull it off.

  2. Season the ribs liberally with Uncle Tim’s T-13 rub. Wrap the ribs in plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.

  3. Prepare your smoker or grill for indirect heat. Fill the water pan with water and add the wood chips to the charcoal or smoker box. Preheat the smoker or grill to 225-250°F.

  4. Place the ribs in the smoker or grill, meat side up, and smoke for 4-6 hours, or until the internal temperature of the meat reaches 145°F.

  5. Wrap the ribs in butcher paper with a little bit of liquid, such as apple juice or beer, and continue smoking for another 2-3 hours, or until the internal temperature reaches 195°F.

  6. This step is optional. Remove the ribs from the foil and brush with barbecue sauce on both sides. Return the ribs to the smoker or grill and cook for an additional 15-20 minutes, or until the sauce is caramelized.

  7. Serve the ribs hot with your favorite sides and extra barbecue sauce.

Note: Smoking pork ribs can take several hours, so make sure you have plenty of time and patience to tend to the fire and monitor the temperature. It's also a good idea to have a digital meat thermometer on hand to check the internal temperature of the meat.
