Smoked Pork Wings

Here's how you can smoke pork wings at home:

Ingredients:

  • 2-3 pounds of pork wings

  • Uncle Tim’s T-13 rub

  • Wood chips for smoking (hickory, mesquite, apple, etc.)

  • Barbecue sauce

Instructions:

  1. Season the pork wings liberally with Uncle Tim’s T-13 rub on both sides. Wrap the wings in plastic wrap and refrigerate for at least 4 hours, or overnight for the best results.

  2. Prepare your smoker or grill for indirect heat. Fill the water pan with water and add the wood chips to the charcoal or smoker box. Preheat the smoker or grill to 225-250°F.

  3. Place the pork wings in the smoker or grill and smoke for 2-3 hours, or until the internal temperature of the meat reaches 145°F.

  4. Brush the wings with barbecue sauce on both sides. Return the wings to the smoker or grill and cook for an additional 15-20 minutes, or until the sauce is caramelized.

  5. Serve the wings hot with your favorite dipping sauce and sides.

Note: Smoking pork wings can take a few hours, so make sure you have plenty of time and patience to tend to the fire and monitor the temperature. It's also a good idea to have a digital meat thermometer on hand to check the internal temperature of the meat.
