Country Style Pork Ribs
Country style pork ribs are a popular cut of meat for smoking due to their meaty flavor and tender texture. These ribs are cut from the shoulder area of the pig and are typically larger and meatier than other types of pork ribs.
To smoke country style pork ribs, you'll need a smoker and a few key ingredients:
Rub: Uncle Tim’s T-13 rub. Rub this generously all over the ribs.
Wood chips: Choose a type of wood that complements the flavor of pork, such as hickory, cherry, or apple. Soak the wood chips in water for at least 30 minutes before using them to smoke the ribs.
Low and slow: Set your smoker to 225°F and smoke the ribs for 2-3 hours. This low and slow cooking method will help to tenderize the meat and infuse it with the smoky flavor of the wood chips.
Baste and wrap: After 2-3 hours, baste the ribs with your favorite barbecue sauce (the sauce is optional) and wrap them in butcher paper. Return the wrapped ribs to the smoker and cook for another 1-2 hours, or until the meat is tender and the internal temperature has reached 145°F.
Rest: Once the ribs are fully cooked, remove them from the smoker and let them rest for 10-15 minutes. This will allow the juices to redistribute and the flavor to deepen.
Serve: Slice the ribs into individual portions and serve with your favorite sides.
